Our
harvest takes place at the moment that the chosen
fruit reaches its optimum maturity. The grapes are
transported to the cellar within just 2 hours being cut from
the vines.
The process of
fermentation (although unchanged for years, never fails to
yield surprises with each harvest) is controlled in order
to extract all the colours and scents that the grape is capable
or delivering.
In
our air-conditioned cellar the wine develops
in large barrels from Bordeaux for the precise amount of time
needed to obtain the optimum rounding for each type of wine.
The crianzas and reserves remain in the barrel for 12 months
or more with at least another year in the bottle
